Eggplant stuffing

Small long eggplants 6 pieces
Ground beef 1 lbs
Onions, diced 1 large
Salt 1/2 tsp
Cinnamon 1/2 tsp
All spices 1/2 tsp
Black pepper 1/4 tsp
Vegetable oil 2 tbsp
Pine nuts 50 g

For the tomato sauce

Tomato juice 2 cups
Tomato paste 1 tsp
Pomegranate molasses 1 tbsp
Salt 1/4 tsp
Black pepper Pinch

Sheikh el Mahshi is a dish made with eggplants stuffed with diced meat and pine nuts, cook in a delicious tomato sauce.

Directions

sauce:

cook tomato juice with tomato paste on medium heat for 20 minutes.

Eggplants:

  1. prepare the eggplants by cutting a pocket using a knife and deep fry them
  2. in a large pan sauté onions till soft, then add ground beef and cook throughly.
  3. Season with salt and , cinnamon, all spices,and black pepper.
  4. Add pine nuts and cook for more 5 minutes
  5. Stuff the eggplants generously.
  6. In a baking tray, spread the sauce and then add the eggplants. Cook in the oven for about 20 minutes
  7. Garnish with chopped parsley and serve it with vermicelli rice.
