Chicken legs, skin removed 3
Chicken thighs, skin removed 3
Medium potatoes, cut into rounds 5
Chopped cilantro 1/2 cup
Garlic cloves, mashed with salt 5
Lemon juice 1/4 cup
Salt 1 teaspoon

This is an easy and amazing way to make potato stew. It’s so moist and juicy inside, it tastes like it’s been marinated. This stew can be enjoyed in anytime.

Directions

  1. Boil chicken in 4-6 cups salted water about 30 minutes.
  2. While chicken is cooking, fry the potatoes in oil until crispy, drain on paper towels.
  3. Fry garlic and cilantro in a little oil for about 2 minutes.
  4. When chicken is done , remove from stock and let cool then shred it.
  5. In a baking pan put the potatoes, shredded chicken,garlic and cilantro ,salt ,stock and bring it to boil then simmer for 15 minutes.
  6. Add lemon juice and simmer for 5 minutes.
  7. Serve it with vermicelli rice.
