Hello friends,

I enjoyed cooking & producing this Biryani video, this biryani is the result of many failures which I corrected and perfected & now I just cook this dish blindly. This is an authentic lamb biryani like it’s cooked in India, I can almost guarantee that you won’t find a biryani who taste like this outside India.

It took me a week & a half to edit this video, and I promise to do my utmost each and every time to improve your viewing experience. Compared to my French videos, I really have put a lot of work into this & I just hope you guys like the new look in my videos.

Ingredients:

1 kg of Leg of lamb
1 Kg Basmati rice (Preferably aged & Indian Brand)
4 boiled eggs

Marinade :

150 ML Yoghurt
5-6 onions
5-6 Potatoes
1 cinnamon stick (Dalchini)
2 Chota Eilachi (green cardalmom)
1 Badi Eilachi (Black Cardamom)
3 cloves
The juice of one lime or nimbu
1 & a half Tablespoon Ginger Garlic paste
1 & a half tablespoon of salt
Half a tablespoon of Kala namak (Pink Himalayan salt)
2 Tablespoon Kashmiri lal mirch powder (Red Kashmiri chili powder)
1 Teaspoon Curcuma powder or haldi
2 Tablespoon Biryani masala powder
Half a teaspoon freshly crushed black pepper
1/4th cup of cooking oil
Mint & Coriander in abundance
4 hair mirchi chopped (Green chilies)
Saffron

Love for the rice:

Saffron & curcuma in 1/4th of a cup of warm water
Salt for the water
More mint & coriander

Whole spices for the fragrance of the rice :
4 chota eilachi
3 cloves
1 Tsp Jeera (Cumin seeds)
1/4 tsp Fennel seeds
1 stick of cinnamon
2-3 bay leaves
8 peppercorns
A few dried rose petals (optional)
1 tsp Dhaniya seeds (Coriander seeds)

For the raita:

Yoghurt
Grated carrots
Cubed cucumber
Sugar
Chaat masala
Garama masala
Then more yoghurt just before serving & sprinkle chili powder , cumin & black pepper
