For the tomato sauce
Tomato juice | 2 cups | |
Tomato paste | 1 tsp | |
Pomegranate molasses | 1 tbsp | |
Salt | 1/4 tsp | |
Black pepper | Pinch |
Sheikh el Mahshi is a dish made with eggplants stuffed with diced meat and pine nuts, cook in a delicious tomato sauce.
Directions
sauce:
cook tomato juice with tomato paste on medium heat for 20 minutes.
Eggplants:
- prepare the eggplants by cutting a pocket using a knife and deep fry them
- in a large pan sauté onions till soft, then add ground beef and cook throughly.
- Season with salt and , cinnamon, all spices,and black pepper.
- Add pine nuts and cook for more 5 minutes
- Stuff the eggplants generously.
- In a baking tray, spread the sauce and then add the eggplants. Cook in the oven for about 20 minutes
- Garnish with chopped parsley and serve it with vermicelli rice.
