Ingredients

Packet frozen phyllo dough 1 (16 sheets)
unsalted butter 1 cup
crushed unsalted pistachios 1 cup
cream filling 2 cups
Syrup 2 cups

Cream filling (ashta)

Heavy Whipping cream 500ml
Sugar 2 tbsp
Cornstarch 4 tbsp
Orange blossom water 1 tsp
Rose water 1 tsp

Syrup

sugar 2 cups
water 1 cup
Lemon juice 2 tsp
Orange blossom water 1 tsp

Shaabiyat is phyllo dough layered with butter, filled with  cream (ashta) baked till crispy and golden color served warm with drizzle of syrup (atir) and topped with crushed pistachios

 

Directions

  1. In a saucepan mix together heavy  whipping cream ,sugar ,cornstarch and turn on the stove keep stirring every few minutes  when start bubbling and getting thick add the orange blossom water and the rose water and mix if it’s not getting thick resolve more corn starch in milk and add it to the cream it should get thick  turn off the stove move to a plate and let it cool down before use
  2. In a saucepan mix together sugar water and turn on stove on medium heat when start bubbling add lemon juice and then after 5 min  (it start to get thicker )add orange blossom water turn off stove and let cool down (it take about 10 to 12 min to make it )
  3. Take out the defrost phyllo dough and split them in half (it’s usually 16 sheet so 8 sheets )
  4. put 2 layers brush with unsalted butter then continue same but don’t butter the last sheet
  5. Cut the phyllo dough to equal squares (use the phyllo box to measure )
  6. fill with cream (ashta )then top with some chopped pistachios and close to a shape like triangle
  7. place in a baking tray and brush them with unsalted butter
  8. preheat oven to 350
  9. bake then till their crispy and  gold color (about half an hour )
  10. take out and drizzle with syrup
  11. sprinkle crushed pistachios on top
  12. Serve warm
