Olive oil 1/4 cup
Onion , finely chopped 1 large
Garlic cloves,minced 3 stalks
Large potatoes, peeled & cut into a cubes 2
Carrots, sliced 3
Corn 1/2 cup
Green beans, chopped 1 cup
Tomato, diced 2
Peas 1 cup
Red kidney beans , 1/2 cup
Zucchini, sliced 1
Celery, sliced 1/2 cups
Salt 1 tsp
Pepper 1 tsp
Bay leaves 2 leaves
Vegetable broth 6 cups

Directions

  1. In a large pot heat olive oil over medium-high heat
  2. Add onions, garlic and celery sauté for 4 minutes. Add in all the vegetable and sauté for 5 minutes
  3. Add in broth ,bay leaves,tomatoes,salt and pepper. Bring it to boil.
  4. Reduce heat to medium-low, cover and simmer until potatoes are almost fully tender, about 20-30 minutes
  5. serve it warm with a sizzle of lemon ?
