Onions, small size 15
Moghrabieh 1 Kilo
Chicken tighs 2 Kilos
Herbal Bouquet
Butter 70 grams
Oil
Moghrabieh Spices; caraway, cumin, curcuma, cinnamon, nutmeg
Flour 3 Tbsps
Boiled Chickpeas, Garbanzo beans 200 grams

Hearty Meal for the whole family. It consists of small pearls cooked with chicken and/or meat .

Directions

  1. We boil chicken with herbal bouquet and small onions.
  2. In another saucepan, we heat 50 g of  butter and 3 Tbsps of oil to coat every moghrabieh pearl. Then we add 1/4 cup of chicken stock and leave to evaporate then add again another cup till they are cooked.
  3. Sprinkle Moghrabieh spices over them, they are caraway, cumin, curcuma, cinnamon & nutmeg. One teaspoon each.
  4. In a small saucepan, we melt 3 tablespoons of butter with 3 Tbsps of flour, we leave them for few seconds to get a golden color. We add a tablespoon of Moghrabieh spices and 1/4 cup of chicken stock with continuous stirring, then we add the cooked garbanzo beans and the small onions and we are ready to serve.
  5. Plate the moghrabieh first then lay over them the chicken. Serve the sauce aside.
  6. Enjoy it with your loved ones!
