Hearty Meal for the whole family. It consists of small pearls cooked with chicken and/or meat .
Directions
- We boil chicken with herbal bouquet and small onions.
- In another saucepan, we heat 50 g of butter and 3 Tbsps of oil to coat every moghrabieh pearl. Then we add 1/4 cup of chicken stock and leave to evaporate then add again another cup till they are cooked.
- Sprinkle Moghrabieh spices over them, they are caraway, cumin, curcuma, cinnamon & nutmeg. One teaspoon each.
- In a small saucepan, we melt 3 tablespoons of butter with 3 Tbsps of flour, we leave them for few seconds to get a golden color. We add a tablespoon of Moghrabieh spices and 1/4 cup of chicken stock with continuous stirring, then we add the cooked garbanzo beans and the small onions and we are ready to serve.
- Plate the moghrabieh first then lay over them the chicken. Serve the sauce aside.
