Directions
- In a large pot heat olive oil over medium-high heat
- Add onions, garlic and celery sautΓ© for 4 minutes. Add in all the vegetable and sautΓ© for 5 minutes
- Add in broth ,bay leaves,tomatoes,salt and pepper. Bring it to boil.
- Reduce heat to medium-low, cover and simmer until potatoes are almost fully tender, about 20-30 minutes
