Zucchini,chopped | 400 grams | |
Potatoe,Peeled and diced | 1 | |
Onion,finely chopped | 1 | |
Garlic,minced | 1 | |
Water | 4 cups | |
Olive oil | 3 tablespoons | |
Butter | 1 teaspoon | |
Fresh mint leaves | 7-8 | |
Maggie cube,vegetable stock | 1 |
A delicious,creamy soup perfect for iftar.
Directions:
In a pot,heat olive oil and butter.
Fry the onions and garlic until soft and fragrant.
Add the zucchini and potatoes and stir for a few minutes.
Season with salt and black pepper and put the Maggie cube.
Cover with water and let cook for 20-25 minutes until potatoes and zucchini is tender.
Using a hand blender, blend the soup u til creamy.
Let simmer for 5 more minutes then serve!
