Ingredients

Zucchini,chopped 400 grams
Potatoe,Peeled and diced 1
Onion,finely chopped 1
Garlic,minced 1
Water 4 cups
Olive oil 3 tablespoons
Butter 1 teaspoon
Fresh mint leaves 7-8
Maggie cube,vegetable stock 1

A delicious,creamy soup perfect for iftar.

Directions:

In a pot,heat olive oil and butter.

Fry the onions and garlic until soft and fragrant.

Add the zucchini and potatoes and stir for a few minutes.

Season with salt and black pepper and put the Maggie cube.
Cover with water and let cook for 20-25 minutes until potatoes and zucchini is tender.
Using a hand blender, blend the soup u til creamy.
Let simmer for 5 more minutes then serve!
