Ingredients

2 medium eggplants
1 tomato
1 small red onion
1/2 green pepper
1/2 cup parsley
4-5 mint leaves
chili pepper optional

Pomegranate dressing

2 garlic gloves
2 Tbsp pomegranate molasses
Lime juice
Salt to taste

Loaded & Baked Eggplant 🍆– this easy and healthy side dish is loaded with onion, mint, parsley, tomatoes, green pepper and topped with pomegranate molasses sauce🤤

This meatless recipe makes the perfect healthy addition to just about any meal.

Directions

  1. Cut the eggplant into circles
  2. Sprinkle with salt and let set until water draw out
  3. Tap with a tissue paper or towel to dry then coat both sides with flour * this step is optional
  4. Line on a baking tray with a parchment paper
  5. Brush top with olive oil
  6. Roast in a preheated oven until softened and golden brown, 25 to 30 minutes (on both sides)
  7. Meanwhile mix tomatoes, parsley, mint, red onion, green pepper, chili pepper.
  8. And mix pomegranate dressing ingredients; minced garlic gloves, pomegranate molasses, lime juice, and salt
  9. When eggplant is done layer up and enjoy !
