Potatoes with Coriander

Step 1: For the roasted potatoes

Potatoes peeled and cut into small cubes 1 kg
olive oil 3 Tbsp.

Step 2: For the coriander sauce

olive oil 3 Tbsp.
garlic finely minced 6 cloves
coriander finely chopped 1 bunch
juice of 2 lemon
red pepper powder 1/2 tsp.
salt 1/2 tsp.

I love making these for my family. I love the combination of coriander and garlic. It gives such an amazing smell. Try it and let me know.

The potatoes can either be fried or roasted in the oven for a healthier version. It is up to you. Either way, they are extremely delicious.

 

Directions

Roast the potatoes

  1. Preheat oven to 200 degrees Celsius.
  2. Toss the potatoes with olive oil and spread them in a single layer in a large roasting pan.
  3. Cook for 40 minutes turning an occasionally until golden brown and color.
  4. Set them aside

Prepare the coriander sauce

  1. Heat olive oil in a pan.
  2. Add the garlic and fry for 1 minute.
  3. Add the finely chopped fresh coriander and cook for 2 minutes.
  4. Add the juice of 2 lemons.
  5. Add red pepper powder (if you like spicy otherwise do not use it).
  6. Add a little salt (as desired)

As a final step mix the coriander sauce with the potatoes and heat in the oven for a few minutes.
