Loaded & Baked Eggplant 🍆– this easy and healthy side dish is loaded with onion, mint, parsley, tomatoes, green pepper and topped with pomegranate molasses sauce🤤
This meatless recipe makes the perfect healthy addition to just about any meal.
Directions
- Cut the eggplant into circles
- Sprinkle with salt and let set until water draw out
- Tap with a tissue paper or towel to dry then coat both sides with flour * this step is optional
- Line on a baking tray with a parchment paper
- Brush top with olive oil
- Roast in a preheated oven until softened and golden brown, 25 to 30 minutes (on both sides)
- Meanwhile mix tomatoes, parsley, mint, red onion, green pepper, chili pepper.
- And mix pomegranate dressing ingredients; minced garlic gloves, pomegranate molasses, lime juice, and salt
- When eggplant is done layer up and enjoy !
I will definitely try this recipe. Loaded with good stuff and the pomegranate dressing is simply irresistible.
