Kibbeh

Minced meat, finely milled 1 Kilo
Bulgur Wheat 350 grams
Small onion 1
Salt, Pepper and Aleppo Kebbeh Dakka Spices
Chili Paste 1/2 teaspoon
1/2 kilo minced meat ( for filling )
Onions, big ( for filling ) 2
Kibbeh dakka spices ( for filling )
Pine nuts
Pomegranate seeds
Frying oil

Kibbeh Bl Saynieh.  Meat dough squares filled with grilled minced meat and pine nuts.

Directions

  1. In a hot pan, fry 2 big diced onions, in some oil then add 1/2 kilo of minced meat till they brown, add the spices (salt, pepper, dakka, cinnamon) , at the end add pine nuts and pomegranate seeds.
  2. In a food processor, cream the meat, onions, chili paste, spices and bulgur.
  3. Bring a big cooking tray, brush with oil.
  4. Divide uncooked meat dough in 2.
  5. Form patties from meat dough and place them side by side in the cooking tray, fill the gaps until you get a homogenous layer.
  6. Add the grilled minced meat layer over the first uncooked one
  7. Using the palms of your hands form patties again from the remaining part,  and place them over the cooked meat layer.
  8. Using some oil or ice water, dip the top of your fingers and smooth the edges.
  9. If you are using a round tray, start by cutting your tray as slicing pizza, then into squares. If else, cut into equal squares.
  10. Pour some oil and bake in the oven, till you get golden edges
