Kafta in Eggplants

Lean Beef Meat 1 Kilo
Small Onion 1
Parsley, chopped 1/4 cup
Salt, Pepper
Sumac 1 teaspoon
Eggplants, Big 2
Tomato 3
Rose Wine 1/4 cup
Water 1 L
Powder Stock 1 Tbsp
Red Pesto 1 Tbsp
Onion Soup 1 Sachet

A healthy and delicious way to present kafta. Lean meat Kafta skewers, wrapped in grilled eggplants and cooked in a special sauce.

Directions

  1. Knead the meat, chopped onions and chopped parsley with salt, pepper, and Sumac.
  2. Form them into a finger shape.
  3. Heat the grill and cook the kafta to get some marks.
  4. Cut the eggplant into medium slices, cut the tomatoes into rounds.
  5. Grill the eggplants till they soften a bit.
  6. Roll the kafta into the grilled eggplants, place them in an oven tray and place the tomatoes on top. To secure they won’t get unwrapped.
  7. Prepare in a separate bowl, the sauce. Whisk the red pesto, Maggi powder stock, onion soup sachet, some rose wine, and water.
  8. Pour the sauce all over, then top with light mozzarella cheese.
  9. Place them in the oven till you get golden edges.
  10. Enjoy it with your loved ones.
