Green Chard | 7-8 bunches | |
Chickpeas (cooked-drained) | 2 cups | |
Tomato paste | 2 tbsp | |
Chili paste | 1-2 tsp depending on how spicy you want | |
Onion | 2 | |
Water | 2-3 cups | |
Salt /pepper | To taste | |
Vegetable oil | 2 tbsp | |
Lemon juice | 1-2 lemons to taste |
Nivig or Green Chard Stew is an Armenian Vegan dish. It is usually eaten during lent season before Easter. But I enjoy it all year round!
Directions
- Wash the Green Chard well and cut into big pieces with the stalks
- Sweat the onions with the vegetable oil
- Add the green chard on top of the onions
- Add the chickpeas (cooked or canned without the canned water)
- Add the tomato paste, chili paste, water, salt pepper and mix
- Cook on high fire first and when the water starts boiling lower the heat and simmer for 15 minutes. Add the lemon juice halfway and stirr.
- Stir from time to time but don’t overstirr as the chard is delicate.
- Enjoy it with basmati rice.
For the rice
Wash 1 cup basmati rice well (2-3 times). Add the rice to 2 cups of boiling salty water and cook covered until the water is fully absorbed. Put off the fire and put a cloth under the lid to absorb the water vapor. Separate rice grains lightly with a fork.
Enjoy the Nivig with rice !
