I love making this easy, healthy chicken recipe. The kids love it and is so quick to make.
Directions
- Heat a skillet over medium high. Add oil to skillet.
- Season both sides of chicken with salt and pepper.
- Add the chicken breast to the skillet and cook for 5 to 6 minutes on each side until they are seared and golden. Make sure the center of the chicken registers 165 degrees F on an instant-read thermometer.
- Remove the chicken breast from the skillet.
- Add the chicken broth and bring to a boil.
- Make sure to “scrape” the bottom of the skillet with a wooden spoon.
- Add the herbs and cook for 2 additional minutes.
- Add the butter and stir until it is melted.
- Put the chicken breast back in the skillet and spoon sauce over top.
- Serve warm and sprinkle some chopped fresh parsley on top.
