A dish with a diverse ways of preparations and ingredients, kibbeh is a mainstay of Middle Eastern cuisine. My version of Baked Potato Kibbeh is an easy, hearty, and delicious meal you’ll want to make again and again.
Directions
- Boil potatoes until very soft.
- Soak fine burghul in hot water for 20 min.
- Prepare the meat filling:fry the onion until yellowish then add the minced meat and cook.
- Season the meat with salt and cinnamon.
- Add the pine nuts over the ematand cook for 2-3min.
- When potatoes are ready,mash until very smooth.
- Combine the mashed potatoes with the soaked burghul,add to it kammouneh and salt.
- Knead the mashed potatoes and burghul until a soft dough forms.
- To assemble the kibbeh,brush a baking dish with olive oil.
- Put a layer of kibbeh then top it with the meat filling then another layer of the kibbeh.
- Cut the kibbeh and decorate to your liking, garnish with pistachio nuts or sliced almonds.
- Drizzle olive oil on top of the kibosh.
- Bake in a preheated oven for 25-30 min.
