Bicarbonate of soda | 1/2 tbs | |

Ashta(cream) | 2cups | |
Sugar syrup | 1cup |
A delicious Ramadan treat! Atayef Asafiry, middle eastern style mini pancakes stuffed with Ashta(cream),dipped in ground pistachios and drizzled with sugar syrup.
Directions:
_ In a bowl, combine all the ingredients and mix until everything is well incorporated.
_In a pan over medium heat, pour 2 tbs of the batter and cook until the edges are dry and you will notice bubbles forming on the surface.
_Complete the batter and cover the cooked atayef so they dont dry.
_Scoop 1ts of the Ashta in the middle of the atayef.
_Pinch the edges together sealing them halfway.
Dip the open side into ground pistachios.
_Arrange the atayef on a serving plate.
_Serve with a drizzle of sugar syrup.
