Ingredients

Asparagus , washed and woody bottoms trimmed off 2 bunches
Garlic cloves 2 minced
Chicken or vegetable stock 4 cups
Heavy cream 1/2 cup
Black pepper 1/4 tsp
Butter 1 tbsp
Salt 1/4 tsp

This asparagus soup recipe is just a simple purée of asparagus with a bit of cream.

Directions

  1. Gather the ingredients. Cut the asparagus into 1- inch pieces and set aside.
  2. In a soup pot, melt the butter over medium heat, add garlic and cook for 30 seconds.
  3. Add the stock and asparagus, and bring it to a simmer. Cook for about 10 minutes, until the asparagus is tender but still green.
  4. Remove from heat and purée using a stick, or regular blender.
  5. Pour back into the pot. Add the cream and cook on low heated through.
  6. Season with salt and black pepper.
