Zucchini 1kg
Big Onion 1
Fresh Mushroom 200g
Sweet Corn 230g
Eggs 2
Butter
Basil 2 Big tbsp
Oregano 2 Big Tbsp
Shredded Mozarella & Gruyere

I’m not a big fan of zucchini; therefore, I tried to combine many ingredients that I love (such as cheese, corn and oregano) in order to make a tasty dish and eat zucchini from time to time!

Three words: Easy . Delicious . Healthy

A must try!

 

 

Directions

  1. Chop your onion (small dices) and your zucchini (circles).
  2. Start by cooking your onion on medium heat with some butter.
  3. When the onion become transparent, add the zucchini.
  4. Keep stirring until the zucchini is half cooked.
  5. Add the mushrooms and then the corns.
  6. Mix all the ingredients together.
  7. Meanwhile, put the eggs in a small bowl. Add some salt, pepper and stir well.
  8. Add the eggs with some shredded cheese to the vegetables.
  9. Add the oregano and the basil.
  10. Put all the ingredients in a casserole and add the rest of the cheese on top.
  11. Bake until golden.
