I’m not a big fan of zucchini; therefore, I tried to combine many ingredients that I love (such as cheese, corn and oregano) in order to make a tasty dish and eat zucchini from time to time!
Three words: Easy . Delicious . Healthy
A must try!
Directions
- Chop your onion (small dices) and your zucchini (circles).
- Start by cooking your onion on medium heat with some butter.
- When the onion become transparent, add the zucchini.
- Keep stirring until the zucchini is half cooked.
- Add the mushrooms and then the corns.
- Mix all the ingredients together.
- Meanwhile, put the eggs in a small bowl. Add some salt, pepper and stir well.
- Add the eggs with some shredded cheese to the vegetables.
- Add the oregano and the basil.
- Put all the ingredients in a casserole and add the rest of the cheese on top.
- Bake until golden.
