White flour ( or whole-wheat) | 1 cup | |
Baking powder | 1 tsp | |
Nut milk (coconut in this recipe) | 1 cup | |
Maple syrup | 2 tbsp | |
Vegetable oil | 1 tbsp | |
Vanilla essence | 1 tsp | |
Apple cider vinegar | 1 tbsp |
These vegan pancakes are super easy to make and with ingredients already found in the pantry.
Directions
- Sift the flour
- Combine the nut milk (coconut milk in this recipe but any other nut milk is as good) the apple cider vinegar and let it curdle.
- Put the flour in a bowl add the baking powder, maple syrup, vegetable oil and vanilla
- Add the curdled nut milk
- Mix well with a whisk until you have a smooth batter
- Heat a non stick pan on the stove and put 1 spoonful of batter on the pan in a round shape and when the batter starts bubbling turn them over.
- Your pancakes are ready
- Pour maple syrup or agave syrup on them and eat. Or enjoy them plain.
- you can decorate your pancakes with bananas, blueberries , strawberries or any fruit of your choice, sprinkle some chia seeds, sunflower seeds and voilà.
