Vegan pancakes

White flour ( or whole-wheat) 1 cup
Baking powder 1 tsp
Nut milk (coconut in this recipe) 1 cup
Maple syrup 2 tbsp
Vegetable oil 1 tbsp
Vanilla essence 1 tsp
Apple cider vinegar 1 tbsp

These vegan pancakes are super easy to make and with ingredients already found in the pantry.

Directions

  1. Sift the flour
  2. Combine the nut milk (coconut milk in this recipe but any other nut milk is as good) the apple cider vinegar and let it curdle.
  3. Put the flour in a bowl add the baking powder, maple syrup, vegetable oil and vanilla
  4. Add the curdled nut milk
  5. Mix well with a whisk until you have a smooth batter
  6. Heat a non stick pan on the stove and put 1 spoonful of batter on the pan in a round shape and when the batter starts bubbling turn them over.
  7. Your pancakes are ready
  8. Pour maple syrup or agave syrup on them and eat. Or enjoy them plain.
  9. you can decorate your pancakes with bananas, blueberries , strawberries or any fruit of your choice, sprinkle some chia seeds, sunflower seeds and voilà.
