All purpose flour | 2 1/2 cups | |

For the filling
Fresh spinach | 2 pounds | |
Onions, finely chopped | 2 medium | |
Olive oil | 1/4 cup | |
Sumac | 1 tbsp | |
Salt | 1 tsp | |
Black pepper | 1 tsp | |
Lemon juice | 2 lemons |
Spinach fatayer are one of the best favorite snacks. They are very popular in Lebanon.
Directions
To make the dough
•In a large bowl place flour and make a well in the center. Add the yeast, sugar and salt. Whisk ingredients then add milk , egg , and olive oil.
• mix well until combined then knead for 5 minutes.
• cover and let the dough rest for 30 minutes.
prepare the stuffing
• Chop the spinach leaves the place it in a pot and wilt for 2-5 minutes over medium low heat. Allow the spinach to cool then squeeze out as much juice as possible. (You want the spinach to be very dry)
•chop the onions very fine and add them to the spinach
• Add olive oil, lemon juice,salt,pepper,and sumac and mix well.
• Cut the dough into egg sized pieces.
• Roll our each piece into a circle
• Add 1-2 tablespoon of stuffing. Pinch 2 ends first then the third to form a pyramid.
• place the fatayer on a greased cookie sheets and make sure all the fatayer are sealed well.
•bake them on the middle rack of a preheated oven at 400f until bottoms are golden.
• Turn on the broiler until the top are golden.
• Cool the fatayer on a wire racked covered with a clean dry kitchen towel.
