Chicken broth | 6 cups |
Chicken maaloubi lebanese dish contains cooked chicken topped with layers of deep fried cal-flower ,eggplant, potato and then topped with rice mixed with spices then cooked with chicken broth then when fully cooked flip up side down and serve with side of salad
Directions
- Boil whole chicken or chicken with bones when water start boiling throw the water then add new water and add bay leaf ,onion ,garlic and cinnamon stick when start boiling Lower the heat
- While waiting for chicken to cook peel eggplant and potato and slice into round thick pieces and cut washed cal-flower to medium size pieces and deep fry half way each kind alone and put in paper towel
- When chicken cooked take out and take out the bones
- strain the chicken broth and leave on the side
- in a pot put 2 cups of rice with water and let it soak for half an hour
- in a pot put butter then chicken brown it little bit then add a layer of potato ,then layer of cal-flower and layer of egg plant
- Drain water from rice then mix with 2 tsp maaloubi spice ,7spice ,salt and pepper
- Put rice on top the egg plant
- then put on top the chicken broth till cover rice
- turn on the stove when start boiling lower the heat to medium and when the water is half way disappeared lower the heat to low and cover cook for about half and hour then flip to a tray
- when you flip it don’t take out the pot right away leave it for couple minutes then take out so it stay in one shape
