Vegan Armenian Bulgur Salad . EETCH

Big Onions, diced 2
Olive Oil 1/3 Cup
Tomato paste 1 Tbsp
Chili paste 1 Tbsp
Big Tomatoes, diced 5
Tomato juice 1/4 Cup
Bulgur Wheat 2 Cups
Salt
Lemon Juice 1/2
Spring onions, Mint As you prefer

Today our recipe is from the Armenian cuisine, it is Eetch.

Easy, healthy and vegan.

Directions

  1. In  a medium saucepan fry the onions in olive oil.
  2. Add tomato paste, chili paste, tomatoes, tomato juice for few minutes, then turn off the heat.
  3. Add bulgur wheat with lemon juice. Season with salt.
  4. Keep the lid closed for an hour, so the bulgur will absorb all the juices without even using fire.
  5. Sprinkle with chopped spring onions and mint, but I have added onion jam that I already prepared in previous recipes. Garnished with drops of olive oil and pomegranate molasses.
  6. Enjoy it with your lovedd ones.
