Today our recipe is from the Armenian cuisine, it is Eetch.
Easy, healthy and vegan.
Directions
- In a medium saucepan fry the onions in olive oil.
- Add tomato paste, chili paste, tomatoes, tomato juice for few minutes, then turn off the heat.
- Add bulgur wheat with lemon juice. Season with salt.
- Keep the lid closed for an hour, so the bulgur will absorb all the juices without even using fire.
- Sprinkle with chopped spring onions and mint, but I have added onion jam that I already prepared in previous recipes. Garnished with drops of olive oil and pomegranate molasses.
- Enjoy it with your lovedd ones.
