this easy chicken stir fry with chili sauce! It’s the perfect back to school dinner. Seriously, on the table in 30 minutes and only one skillet! What more can a mom ask for?

Intructions:

Get your kettle boiling full of water. Put your rice noodles into a large bowl, and once the water is boiling add the water to the noodles. Stir and let it sit.

Heat up your cast iron pan (or skillet) while your cut up your chicken.Once your pan is hot, add your oil, and your chicken, salt and pepper.

Dice up your onion and crush your garlic and add to the chicken. 

While your chicken is cooking, chop up the remaining veggies. Depending on how big your pan is, you can add your veggies right to the chicken, or if there’s not enough room, remove the chicken to a plate and then saute your veggies(except broccoli) until tender. (5 minutes) Then add in broccoli and let cook 2 minutes.

If you had to take out the chicken, add it back to the pan and let it warm again for 2 minutes

Drain your noodles, and add 2 tbsp oil. Stir into the the veggies and chicken. Add your sauce and serve!
