Flour 2 cups
Oil 1/4 cup
Corn starch 2 tablespoon
Warm water 3/4
Salt 1 teaspoon
Vinegar 1 teaspoon

Filling

Arabic cheese or akawi cheese 1 cup
Mozzarella cheese 2 cups
Egg white 1
Chopped parsley 1/4 cup

Sambousek is small pastries filled with cheese deep fried and served as an appetizer.  

You can make them ahead of time, put them in a tray and freeze them. When they are frozen, move them to a freezer safe ziplock Bag and when you need just take them out and deep fry while they are frozen.

Directions

  1. In a bowl put flour, corn starch  and oil mix till oil mixed with the flour then add vinegar, salt, and warm water mix and knead till Forming a soft dough cover and let it rest for 15 min or more
  2. Mix 1 egg white add mozzarella cheese and Arabic cheese ( feta or akkawi or halloom) and chopped parsley mix and set on the side
  3. flour a flat surface and roll the dough till it’s thin, use round cookie cutter and cut into medium size circles .fill with cheese. close and use the fork to press at the ends all around to shape half moon
  4. heat oil then deep fry the sambousek

    I’ve made this dish many times from different recipes and I have to say this was definitely the best one for the dough – came out just like the picture 🙂
