Ingredients

cherry jam 2 tbsps
egg yolk 2
eggs 2
flour 3 cups
warm milk 1 cup
butter 50 grams
oil 1/2 cup
honey 1 tbsp
yeast tbsp
salt and pepper
yogurt 4 tbsp
steak 1 1/2 kilo
bread crumbs 100 grams
kaak 100 grams
parsley chopped 1/2 bunch
garlic cloves 2
pistachios 2 tbsps
parmesan 2 tbsps
pine nuts 2 tbsps

A special gourmet dish for big gatherings and perfect for a Sunday lunch.

It consists of seasoned beef steak with a crunchy twist rolled by a soft dough with golden edges. Notes of sweet and tangy cherries at the end gives you the perfect bite.

Directions

  1. In a big bowl we put all the ingredients of the dough: flour, milk, butter, oil, honey, yeast, salt, yogurt and eggs.
  2. We knead them all together and when we get a nice dough we leave it to rest.
  3. In another bowl we mix the bread crumbs, kaak, parsley, garlic, pistachios, pine nuts, salt, oil and parmesan.
  4. We sear the steak in a hot pan with some oil.
  5. On a nylon paper we place the steak pieces one near the other to form a nice rectangle then we spread the bread crumbs mixture all over, we roll them to get a nice log and we refrigerate for 30 minutes.
  6. Unwrap from the nylon paper, and place the log in the middle of the dough, close the edges well.
  7. Brush the dough using egg yolk, some milk, pinch of instant coffee, salt and paper.
  8. Place in the oven at 200 C Bake until golden.
  9. Place some cherry jam on top and serve.
