Asparagus , washed and woody bottoms trimmed off | 2 bunches | |
Garlic cloves | 2 minced | |
Chicken or vegetable stock | 4 cups | |
Heavy cream | 1/2 cup | |
Black pepper | 1/4 tsp | |
Butter | 1 tbsp | |
Salt | 1/4 tsp |
This asparagus soup recipe is just a simple purée of asparagus with a bit of cream.
Directions
- Gather the ingredients. Cut the asparagus into 1- inch pieces and set aside.
- In a soup pot, melt the butter over medium heat, add garlic and cook for 30 seconds.
- Add the stock and asparagus, and bring it to a simmer. Cook for about 10 minutes, until the asparagus is tender but still green.
- Remove from heat and purée using a stick, or regular blender.
- Pour back into the pot. Add the cream and cook on low heated through.
- Season with salt and black pepper.
