One of my favorite recipes to make from this book is the raspberry muffins. They are so moist, tasty and quick to prepare. The mixture of raspberries with the rind and juice of a lemon gives it a fresh flavor. They can be made with frozen raspberries, or blueberries as well.
Directions
- Preheat oven to 400 degrees F.
- Sift the flour, baking powder and sugar into a large mixing bowl.
- Take another mixing bowl and put together the eggs, milk, oil, vanilla extract, lemon rind, and the juice and beat together with a fork.
- Add the wet ingredients to the bowl with the dry ingredients. Mix lightly to make a soft batter.
- Add the fresh raspberries to the batter, stirring until just combined.
- Pour the batter into paper pan muffin cups.
- Bake for 20 minutes until firm until golden.
- Let cool and serve sprinkled with a little of powdered sugar.

so this recipe is something quick and easy post those gym workouts or lazy but healthy weekend breakfasts 🙂

Guacamole my style ;
In a mortar n pestle mash together avocado n mango , ( u can also mash with a spoon in a bowl or use a mixer to grind ) to this add the chopped veggies, salt and lemon juice to taste . Add the pomegranate for a crunchy texture .( do not grind with pomegranate )
On a toasted bread spread the guacamole and top it with eggs ( ur way ) boiled , fried or poached.
Homemade chicken patties burger quick and easy !! Recipe
DIRECTIONS :
1. Thoroughly wash / clean the chicken , drain excess water . Cut into small pieces.
2. Roughly grind the chicken in a food processor/ mixer.
3. In a separate bowl add the dry ingredients ( garlic powder, onion powder, paprika powder , oregano, scallion , salt and pepper to taste ) mix well .
4. Combine the dry ingredients along with the breadcrumbs to the ground chicken. Mix well .
5. Divide in 4 equal parts , and flatten them to form the patties .
6. Place the patties between the baking sheets ( grease them with little oil if required )
7. Freeze for about 10 mins .
8. Take them out from freezer , and cook them on pan with little oil or you can also grill / bake them .
ASSEMBLE & ENJOY ?
Slice the burger buns , I slightly toasted the buns coz I like it little crunchy. Spread the garlic paste , place a patty , a slice of onion , tomato , few jalapeños. Top with garlic mayonnaise.
For him I used the multigrain buns and for myself the regular ones .
I also added chia seeds as toppings for him as it give a slight crunch/ grittiness to the mayo .
For me ofcourse I added cheese ?
Tips and tricks
1. U can make these delicious ones even if you are on a diet .
2. You can add chia seeds and flax seeds for making it even more healthy.
3. Add lettuce in the burger as it compliments the taste of patties and mayo ( I had none at home ?)
4. Melt the cheese along with heating the patties on pan for better taste .
5. You can store these patties in freeze , but Since it’s super quick I would still suggest making it fresh .
