Boneless chicken breasts cut into thin slices | 500 grams | |
Enchilada sauce | One jar | |
Shredded jack/ mozzarella and cheddar cheese | 2 cups | |
Sliced onions | 1 medium | |
Sliced Bell pepper | 2 pieces | |
2 tsp of garlic powder | ||
1 tsp of paprika | ||
1 tsp of onion powder | ||
1 tsp of cumin | ||
Salt and pepper | ||
2 tbsp of oil |
Here is an easy, delicious Mexican dish that takes no time to prepare
Direction
1. Marinate the chicken with all the spices for about 30 mins.
2. In a hot pan on medium heat put the oil, then add the sliced onions. Cook for 2 mins or until tender
3. Add chicken allow to cook for 7 mins or until brown
4. Drop the sliced bell peppers and continue to cook for another one or two mins , remove chicken on a platter, allow to cool.
5. Now ready to layer your enchiladas, spread to coat the tortilla with a spoon full of Enchilada sauce,then add 2 spoons of the chicken mix and lastly a handful of cheese ,Wrap the Enchilada and arrange them in an oven tray
6. Once all the tortillas are stuffed and rolled, top with remaining enchiladas sauce and cheese
7. Pop in a preheated oven for 15 until the cheese melts. Serve hot with guacamole .
