Ingredients

Bulghur or Cracked weat 3 cups
Tomatoes 5-6
Parsely 1 bunch
Spring onion 2-3
Tomato paste 2 tbsp
Olive oil 4 -5 tbsp
Salt 2-3 tsp but adjust to taste
Water 2-3 tbsp
Lemon juice 2-3 lemons adjust to taste
Tahini (optional) To sprinkle on top (
“Hosrom” or sour grape juice (optional but adds that special “ secret ingredient” taste) 1 tbsp

Armenian  Raw “Itch” is a refreshing salad that goes along with any dish or even alone as a refreshing light and nutritious dish. It’s a very easy VEGAN salad to prepare.

 

Directions

  1. In a round big bowl, put the Bulghur
  2. Cut the tomatoes into small cubes and add them to the bulghur
  3. Pluck the leaves of the parsely from its stems, wash, put them in a salad spinner to remove excess water (dressing will stick better) and mince them semi fine. Add parsely to the mix.
  4. Wash the spring onions and  cut them in small pieces. Add them to the mix.
  5. Add the tomato paste, water, lemon juice, salt and olive oil to the Bulghur bowl and mix well.
  6. At the end I like to add the “hosrom” which is sour grape juice. This juice is very similar to lemon juice but adds such a special flavor to the salad. If it’s not available in your area, it can be skipped.
  7. Give the whole salad a good mix, making sure to incorporate all the ingredients.
  8. Place it in the fridge for 10 minutes to allow the Bulghur to soften
  9.  You can add a drizzle of tahini before eating. But this is optional and not a must.
  10. Enjoy it with cabbage leaves or lettuce leaves!!!
