Bulghur or Cracked weat | 3 cups | |

“Hosrom” or sour grape juice (optional but adds that special “ secret ingredient” taste) | 1 tbsp |
Armenian Raw “Itch” is a refreshing salad that goes along with any dish or even alone as a refreshing light and nutritious dish. It’s a very easy VEGAN salad to prepare.
Directions
- In a round big bowl, put the Bulghur
- Cut the tomatoes into small cubes and add them to the bulghur
- Pluck the leaves of the parsely from its stems, wash, put them in a salad spinner to remove excess water (dressing will stick better) and mince them semi fine. Add parsely to the mix.
- Wash the spring onions and cut them in small pieces. Add them to the mix.
- Add the tomato paste, water, lemon juice, salt and olive oil to the Bulghur bowl and mix well.
- At the end I like to add the “hosrom” which is sour grape juice. This juice is very similar to lemon juice but adds such a special flavor to the salad. If it’s not available in your area, it can be skipped.
- Give the whole salad a good mix, making sure to incorporate all the ingredients.
- Place it in the fridge for 10 minutes to allow the Bulghur to soften
- You can add a drizzle of tahini before eating. But this is optional and not a must.
- Enjoy it with cabbage leaves or lettuce leaves!!!
